Open Egg Salad Sandwich

I have my home made mayonnaise and now I can enjoy it as I like. I made egg salad today and it was scrumptious. Tossed in mayo, spring onion, celery, vinegar, olive oil and just a pinch of salt and we were off to the races.
I chose to enjoy mine in an open sandwich. Just in case you're wondering about the difference in color of both the photos, it's because I used my compact for the first shot my dSLR battery had to re-charge.
