I finally fulfilled the long standing order I had for a carrot cake. This order had been place almost six months ago but I just never had the time to fill it for various reasons. It nagged at me as it had been on my to-do-list for way too long.
The made to order cake weighed 1.5kg and I had spare batter, which I turned into little carrot cake muffins for my personal consumption. It yielded 10 muffins.I left the carrot roughly shredded so that you can still see the carrot within the cake. It also has walnuts, raisins, pineapple pieces and two green apples blended. As also I will have my sample as all chefs do. I like the crunchy toasted almond pieces that I scattered on the cream cheese icing.
