The made to order cake weighed 1.5kg and I had spare batter, which I turned into little carrot cake muffins for my personal consumption. It yielded 10 muffins.
I left the carrot roughly shredded so that you can still see the carrot within the cake. It also has walnuts, raisins, pineapple pieces and two green apples blended. As also I will have my sample as all chefs do. I like the crunchy toasted almond pieces that I scattered on the cream cheese icing.
