It's almost two years since my mum's passing, and we're still uncovering things that she left us that included recipes scribbled on pieces of scrap paper. Like my mum, I love collecting recipes. Mine are tucked away on my hard disk and backed up on a server in the cloud somewhere.
My mum's Sambal Udang recipeSpice mix (pounded or ground-up)
2 tsp turmeric power
1/2 lb small red onions
10 dried chilies
3 fresh red chilies
2 buah kenas
1 to 1/2 tsp vegetable oil
2 tbsp lime juice
1 tbsp sugar
1 pint Water
12oz prawns
Salt to taste
Coriander leaves
Method
Fry spice mix until fragrant in vegetable oil
Add in water, lime juice and sugar
When gravy comes to a boil add in prawns (head and shell intact)
Cook on high-heat for 1 minute then simmer for 15 mins
Sprinkle on chopped coriander leaves before serving
My mum's Opor Ayam recipe
Grind these into paste:-
4 shallots
1 clove garlic
½ tsp balachan
4 tbsp cooking oil
½ tsp ground turmeric (kunyit)
1 tbsp ground galangal (langkwas)
1 tbsp ground candlenut(bua keras)
1 tbsp ground lemongrass (serai)
½ tbsp ground coriander (ketumbah)
2 tbsp assam juice
¼ tsp cumin (jintan puteh) powder
½ tsp ground chili
2 ½ glasses thin coconut milk
1 glass coconut milk
4 Indonesian bay leaves (daun salam)
2 kaffir lime leaves (lemau perut leaves)
5 green chilies
5 red chilies
1 kg chicken
Method
Fry paste till brown
Add remaining ingredients
Add chicken pieces fry till fragrant
Add think coconut milk and leaves simmer till tender
Add chilies
